Sour Cream Muffins

These are Paula Deen so you know they are yummy and buttery!

2 cups self rising flour
2 sticks (yes you read that right!) butter, melted
1/2 pint sour cream (I tend to use a little more)

Mix ingredients together and spoon into ungreased muffin tins...Bake for 25-30 minutes.  Ohh so good!

Tortilla Soup

1 pound chicken breast
2 TB oil
1 16 oz jar salsa
1 can black beans (rinsed and drained)
1 bag frozen corn (thawed)
1 packet taco seasoning
1/2 c water
1 can V8 (32 oz)
toppings: tortilla chips, sour cream, shredded cheese, fresh cilantro

Cut chicken into bite sized pieces.  Heat oil in skillet and cook chicken until no longer pink.  Add water and taco seasoning and cook until pieces are well coated. 
In crockpot (or big pot on the stove) combine V8, salsa, black beans, corn.  Add chicken and stir.  Cook on low for 3-4 hours.  Serve with sour cream, shredded cheese, tortilla chips, and fresh cilantro!  So good on a cold day!

CrockPot Chicken Fajitas

This is one of MY favorites.  It's so easy and healthy!
1-2 pounds chicken breast  cut into strips
A variety of bell peppers (I use one of each color) cut into strips
1/2 onion cut into strips
8 oz can diced tomatoes
1 TB cilantro
1 tsp chili powder
2 cloves garlic minced
1 tsp cumin
salt and pepper

Throw it all in the crockpot and cook on low for 6 hours. You may want to add a little more seasoning before you serve since cooking in the crockpot dilutes the flavor after awhile!  To serve put mixture in fajita sized tortillas and top with your fav toppings!  Sooooooo good!
